It features a milky and buttery taste with notes of tropical fruit and green peppers derived from its natural, red smear on the rind and albino blue mould inside. As Marquis matures, the taste and flavour of the red smear become subtly sharper, while the cheese itself gains more character. The unique production method of Castello Marquis ensures the mould culture develops from the inside of the cheese, and the red smear does so from the outside; providing a creamy consistency.
