THE WORLD GOT MAD

Founded by Noma restaurant’s chef and owner, René Redzepi, MAD is a not-for-profit organisation that aims to spread ideas for an ethical, sustainable food culture. This year, over 1,500 applicants attempted to secure a spot at the fifth MAD Symposium, but only 350 from 43 countries made the cut.
As part of the two-day event, held on August 28-29, participants reached by boat an undeveloped peninsula between the Atlantic Ocean and the Baltic Sea. There, they could choose among more than 100 different sessions. One of the main topics was the importance of nurturing the food community’s next generation.
“Our trade needs more friendship, collaboration, caretaking, guiding,” said Redzepi. “The pay-it-forward philosophy might sound idealistic, but I know it works.”
