Meet the Winemaker | Matt Large, Wither Hills

Wither Hills focuses on producing well-balanced and flavourful wines, all under the guidance of Head Winemaker Matt Large. From overseas experience to working his way up from a vintage position, Large has contributed to the passion behind Wither Hills producing great wine, beginning at their Rarangi Vineyard.

As Head Winemaker, Large oversees Wither Hills’ wine production quality. Wither Hills ensures balance in every drop by expressing its vineyard and the cool climate that Marlborough delivers.

“We have a real passion for making quality wines that our consumers enjoy. We like to have fruit flavours at the core of all the wines we make and produce wines that are well-balanced and flavourful,” said Large.

At the core of Wither Hills is a solid focus on sustainability. Both the winery and vineyards are accredited to the Sustainable Winegrowing New Zealand Programme and accredited net carbon zero through Toitu. Large explained that the team are always looking for new ways to improve their practices, such as more extensive initiatives like water and waste reduction, recycling, and more efficient use of fuel and gas.

Over the last 12 years, Wither Hills has planted more than 20,000 native plants and spent thousands of hours eradicating pests and weeds.

“Each year, we stop the whole winery and viticulture team for a day to spend time enhancing this nationally significant wetland together, but the Raurangi VIneyard team fo bits and pieces to improve this area all year round,” said Large.

Over the last eight years, “Lean manufacturing” was introduced onto the sites, and Large explained this is to complete production more efficiently and develop quality. A central focus for Large moving forward is people development; he enjoys helping young people get involved in the industry. Alongside this, Large intends to work on innovation and efficiency, understanding how their business can operate more forwardly with technology.

A new fruit vintage comes each year, which is exciting for Large. Taking fruit and turning it into something customers savour and enjoy is part of the thrill of winemaking.

A career highlight for Large was being a part of the team that created the Air New Zealand Wine Awards Top Sauvignon Blanc and Pinot Noir – not once, but twice. The travel that comes with this work is a significantly rewarding element of Large’s career. When Large is not elbow-deep in his work, he relaxes in the outdoors, biking or fishing – enjoying the Marlborough Sounds nearby.

Large emphasised the importance of hard work and finding fulfilment for anyone interested in going into the wine industry. Learning the science in the craft and art of winemaking is regarding experience for anyone passionate about it.
