USA | Bagged lettuce is washed, but it is not sterilised. That distinction is central to the Cyclospora outbreak exploding across the USA.
Fresh-cut salad leaves generally pass through one or more industrial washing stages after they have been trimmed and cut.
Depending on the processor, this may involve flumes, agitation tanks, sprays and rinses. The water commonly contains a controlled sanitising agent. Its most important function is to stop contaminated leaves from spreading organisms through the shared wash water, rather than to eliminate every pathogen already attached to the lettuce.
“Triple washed” usually means the product has moved through three washing or rinsing stages. It does not mean:
- Every leaf has received three individually verified washes.
- The lettuce has been disinfected.
- All parasites or bacteria have been removed.
- The product is protected from contamination that occurred before processing.
- The phrase "triple washed" provides reassurance about the processing steps, but it is not a safety guarantee.
Why washing has limits
Lettuce is difficult to clean because it has folds, creases, cut edges and a large uneven surface. Microorganisms can cling to the leaf, become trapped in damaged tissue or sit in areas that wash water does not reach effectively.
Cyclospora is particularly problematic. According to the FDA, rinsing produce can reduce contamination but may not eliminate the parasite. It is also resistant to commonly used chlorine-based sanitisers, meaning the commercial washing process that helps manage many bacterial risks may not remove Cyclospora reliably.
This explains why a bag can be genuinely pre-washed and still become part of a recall. It does not necessarily mean the processor skipped the wash. It can mean the contamination occurred at a level or in a location that washing could not correct.
Whole-head lettuce may be different
Whole heads packed directly in the field may not be washed before sale. Consumers are expected to remove damaged outer leaves and rinse the lettuce under clean running water before eating it.
That does not automatically make whole-head lettuce safer. It may have undergone less cutting and handling than a bagged salad, but its safety still depends on irrigation water, field hygiene, harvesting, transport, refrigeration and handling in store and at home.
Should shoppers wash pre-washed salad again?
Under normal circumstances, US food-safety guidance generally says produce labelled “ready-to-eat” or “pre-washed” can be used without washing it again. Rewashing it in an unclean sink or with contaminated utensils can introduce new germs.
The CDC’s Cyclospora guidance nevertheless advises thoroughly washing fresh produce, including pre-washed produce, while acknowledging that washing reduces but does not eliminate the risk.
The practical point is that no amount of home washing makes recalled lettuce acceptable to eat. Recalled product should be discarded. For unaffected produce, washing may reduce surface contamination but cannot turn a potentially contaminated product into a reliably safe one.
Consumers should not wash lettuce with soap, detergent or household cleaning products. The FDA recommends clean running water for produce that requires washing.
Does lettuce deserve its reputation?
Lettuce is not inherently dirty or poor quality, but it has a genuine risk profile:
- It is grown outdoors and can encounter contaminated water, soil, animals and handling equipment.
- It is usually eaten raw, so there is no cooking stage to kill pathogens.
- Its uneven leaves are difficult to clean completely.
- Cutting increases surface area and creates damaged tissue where organisms may attach.
- Bagged salad can combine leaves from a large volume of produce, potentially extending the reach of a contamination event.
So lettuce is not merely getting a bad rap. Its production and consumption model leaves fewer opportunities to correct contamination once it occurs.
