A Solution to the Egg Shortage?

The Vegan Society of Aotearoa is sharing the secrets of egg alternatives as the nation battles with an egg shortage. Plant-based alternatives such as flax seeds, chia seeds, applesauce, mashed banana, tofu, aquafaba, peanut butter and agar agar can all be used in baking and cooking. There are also commercial egg substitutes.

There are many options for plant-based ‘eggs’ and these common replacements can be used in almost all recipes where eggs are used. There are even recipes for vegan hard-boiled eggs, fried eggs, omelettes, fritattas, scrambled eggs, poached eggs, quiches, you name it, there is a vegan recipe for it.

The organisation said microplastics are often found in egg yolks, which means by consuming eggs, people are also consuming plastics. It is uncertain how many plants are contaminated in the same way.
