Experimental architectural jelly brand, The Jellyologist, has today announced the launch of their bespoke jelly-making kits, merging the discipline of architecture with the joy of food.
What began four years ago as an experiment with innovative flavour combinations and 3D printing moulds, turned into a 100-day instagram project dubbed ‘The Jellyologist’. The brand only grew in popularity from there and began catering parties, weddings, designing custom flavours, and even built a city out of jelly.
With the launch of its first-of-a-kind creative kits, The Jellyologist revolutionises a category that hasn’t seen innovation in around 60 years. The brand continues to push the boundaries of jelly making with truly tasty Kiwi flavours to be enjoyed at any age or any occasion.
Over a year in development has seen The Jellyologist’s signature favourite gourmet jelly flavours reinvented in powder form, so people can recreate them at home with ease. Each jelly mix comes with specially paired garnishes to elevate the look, texture and flavour. It’s the nostalgic joy of jelly with no artificial colours, flavours, or preservatives. Just all natural, delicious flavours combined with 100% New Zealand fruit and premium ingredients.
The Jellyologist range includes a Jelly Kit (with 12 signature cone-shaped moulds, two flavour varieties, and an instruction card), alongside six different Jelly Mix packs. Flavours include:

“My goal when developing these flavours and kits was to be fun, unique, and innovative; a total shake up from the jelly at kids birthdays or in Christmas trifle for the past 60 years. It was my experimenting with jelly shapes and moulds that really grew The Jellyologist, so I’ve created a jelly kit complete with my signature cone-shaped moulds, so that you too can be a jellyologist at home,” said Jessica Mentis, Founder, The Jellyologist.
